How to Prepare Vegetables for a Picnic

I ran across this YouTube video on how to prepare vegetables for a picnic, which would be great for those that don't eat meat but still enjoy picnics. My dietitian friends tell me that we should include more vegetables in our diet, and this looks like a good way to do it:
